Berry and Pistachio Crumble

This berry and pistachio crumble has just the right amount of nutty sweetness.

  • 500g frozen mixed berries
  • 2 tbs raw honey
  • 1 cup almond meal
  • 1 cup pistachio nuts
  • 1/2 cup dried apricots
  • 1/4 cup coconut palm sugar
  • 1/4 cup extra virgin olive oil
  • Zest of 1 orange
  • Full-fat Greek yoghurt, to serve
  1. Preheat oven to 200°C.
  2. Spread frozen berries over base of ceramic pie dish. Drizzle berries evenly with honey, then bake for 10 minutes.
  3. Meanwhile, to prepare crumble, add remaining ingredients to a food processor and blitz until texture is crumbled. Be careful not to overblend into a sticky paste. Sprinkle crumble mixture on top of baked berries, making sure to cover berries completely, then bake for another 15 minutes or until top is golden brown. Serve with full-fat Greek yoghurt.
